we blended the beer with some young 3 Fonteinen lambic and added a tad more candi sugar

new American oak Gin Barrels for 14 months

and oak character contained within a robust stout shadow

For this small batch of Nocturne, we blended three different vintages of this once in a year brew. Around the coldest of nights, we then brew a dark pure malt beer that we ferment and mature on our oak lambic barrels. While blending a very old portion in this case both six year old (46%) and three year old versions (44%) with a fresh brew, we make it our version of a Vlaams Oud Bruin.
