Never heard of Lambic beers? They're funky, bright, vinous brews that originated in Belgium in the 13th century. During a window of specific overnight temps in the fall each year, we take traditional turbid wort, let it rest over many nights in the open air coolship, and allow the finest wild yeast and microorganisms to join in on
